Yes, you can still get those souvenir shop on Pagoda street. Take the NE MRT to Chinatown Station %26amp; look for the exit that goes out to Pagoda Street.
I believe there are more such shop on the same street now %26amp; varieties have increase (Now widely known to tourist as the S$10 souvenir shop - They have any 3 item for S$10 etc....).
it is better to go during weekday afternoon. You can have lunch at The Smith Street Food Centre and then walk back to Pagoda street to shop.

For the tourists, Chinatown is mainly the Pagoda St, the Temple St, the Sago Lane, the Keong Saik Lanes etc etc... These shops do sell some specialties like what you mentioned but it is often catered for tourists. You will also find lots of souvenir shops and some traditional crafts in this area. An interesting place to get souvenirs might just be the ';3 for S$10'; shop. There is also a shop where there is a ';master'; to help you write western your name in chinese caligraphy on a traditional paper fan at about S$10 (if price remained the same).
For many locals, we visit places such as the People%26#39;s Park Complex, People%26#39;s Park Centre, the OG etc.
The People%26#39;s Park Complex (DAY TIME, Retail Shops tend to close at around 8pm on weekdays) is more popular:
1st Floor: Hawker Centre with lots of local food variety
2nd Floor: A wide variety of cloths (cotton, satin, silk etc) at reasonable prices. And you could now find some shops offering tailor services.
3rd Floor: Ladies Fashion Clothes, toiletries at cheap prices, cosmetics at cheaper prices and some of the shops do sell tablerunners, bags etc.
In the Bugis Street Markets, if we do refer to the same place, it is just opposite the Bugis Shopping Malls known as the Bugis Junction and Parco. It is a non air conditioned market on the first floor and air conditioned at the 2nd level. It sells mainly fashion clothings, manicuring stuff, some food coffeeshop/small restaurant, some CD shops etc.

I went during the day. It sells the same sort of things you can readily find in Sydney%26#39;s Chinatown!!So did not buy anything. Don%26#39;t miss out on going into the Chinatown Heritage centre though. That%26#39;s really interesting, especially the recreated living quarters of the early settlers. If you are looking for something different head to Little India to pick up on some bollywood stuff and CDs plus watches, and filigree jewellery plus have your fortune told by a parrot or the Arab district around the Sultan mosque where the shopping is interesting. Went to Bugis Street too - it%26#39;s OK. Plenty of things there but will depend on what you want.

Suying I have listed in my notes (information from someone I know) to do the following.
up main road (EU TONG SEN street/ New bridge road) to Peoples park complex/ Yue Hwa chinese products .
Then across into Sago st, Smith st, Pagoda st and Chinatown complex. Pagoda street has best souvenirs.
3 for $10 shops around there (jewellery) and silk products. Painted umbrellas etc.
would this be where you are meaning? Can we walk there from Waterloo street?
And for little India I have listed to do,

Go into the side streets for costume jewellery, spices, insence etc.
(I am not into bollywood films) and we are staying next to a temple.
I also am staying near Bugis street so we will browse there.

That boss U see in the first pic, talk loud but dun mistaken him as rude ^__^ (That wat I think until some old pple told me that his personalities ^__^).
There is a desert stall (First stall at a corner, opposite a Fruit Juice Stall that sell good Ice Kacang %26amp; which was not in the blog but was really good, the Old uncle was generous with the brown sugar syrup. He also sell a real thirst Quncher Plum Drink.
And All the way to the back where a row of stall face the apartment opposite and where there are Muslim Food Stall.........here at the first corner stall is a really good chinese chicken rice stall.....Damn good chilli sauce for tasty chicken rice.......The soup that come with the chicken is simply delicious.....
If I am walking all the way from Smith Street to Yue hwa, this is wat I would do:
Walk to Chinatown Food Centre, have either chicken Rice or Roast meat (I prolly choose the chicken Rice %26amp; for 2 person, get half a steam White chicken with 2 rice)....after chicken rice, walk back about 3 row %26amp; order the ice Kacang for desert.
From here, walk over around chinatown (Visit the Buddha Relic Temple, if U want) then to Pagoda Street to get your 3 for S$10 souvenir %26amp; walk down to Chinatown MRT over to the other side %26amp; have Yong Tau Foo Soup or shop at Yue Hwa first ^__^. If you like to get some handbag, you might want to go up to the handbag department of OG Department Store here. (They have a good range of ladies handbag here).

From waterloo street, walk to Bencoolen Street (Main Road just behind South East Asia Hotel / famous temple %26amp; where The new Ibis hotel is located - at the bus stop take bus# 147 to Chinatown).
Abit too far to walk from waterloo to Chinatown.

Your plan seems to look good. And by following that schedule you should be able to cover quite alot of things. =)
And yes, I would also opt to catch my lunch at the People%26#39;s Park Complex Hawker Centre. Most of the shops there are pretty good. As per recommended, there is a famos Yong Tau Fu Stall with a super long queue. However, if i%26#39;m not mistakened this stall sells Yong Tau Fu without noodles. Good and bad... depending if you are a big eater! =p
If you arent interested in the long queue, and equally good alternative, but not lucky enough to get good publicity is the Yong Tau Fu Stall named Pei Ji. It is located near the end of the hawker centre nearer to the KFC. Personally I love this stall better than the long queue stall. You could order both to try! There is also a famous pan fried dumpling stall... (i forgot the name)... where the chef does the dumpling openly... so you would be able to notice it when you pass by.
And also as per suggested by earlier post on the China Heritage Centre. Don%26#39;t miss it. Cheap and good.

However I often avoid going to this restaurant during peak hours to avoid the crowd and I always thought the food taste better during off peak hrs!
Check it out as it%26#39;s delicious and affordable (not too pricey for a restaurant).
There are so much good food around the area... and i really doubt if you could finish food tasting!
It is walkable from Waterloo... but at least an half hour walk. As singapore%26#39;s weather is kinda humid... it might get unbearable. But since you would be in a touring mode... I suppose you would have quite a few stopovers in between for a cooling session at some air-conditioned buildings along the way. =)
